In the province of Trieste there are only a few of Glera’s vineyards that own the specific mention of Prosecco DOC Trieste. The Millesime Extra Brut Prosecco Spumante originates from one of these grapes, and was named Audace after the history of its origins and many concepts and particular coincidences that guided us towards the idea of realising the first Prosecco DOC Trieste, left to age into the waters of the Adriatic Sea in the Trieste Gulf.
By producing the Audace, obtained from the grapes of the 2021 harvest, we wanted to honour two historical events of great value for the history of Prosecco and the city of Trieste: the first traces back its origins to 1821 (200 years after the first Prosecco harvest), when along the Trieste’s coastline, Prosecco had already started its production through a second fermentation process in the bottle in accordance with the traditional method. The second historical event worth mentioning dates back to 1922 (100 years ago) when the mole of San Carlo was renamed “Audace” after the sailing of the first Italian military ship, the renowned destroyer. Since then, it became the most famous suspended walkway on sea, and privileged stage to the world biggest sailing regatta, the Barcolana.
By baptising 6.492 bottles in the sea, we wanted to launch a bold project, the Prosecco DOC Trieste, which at a depth of 20m, was left to age with extraordinary peculiar parameters: salinity, temperature, concentration of dissolved oxygen, level of phosphates, silicate, nitrite, nitrate and chlorophyll. All these natural parameters tend to change based on the season and the flow winds, guaranteeing to Audace Trieste its exceptional and unique taste. Bura and Scirocco generates considerable inertial fluctuations that contributes to the constant movement of the bottles, moreover this continuous lull has brought to an outstanding and unique evolution that we hope you will be able to feel at every sip, sharing with us the “audacia” of this story.
The Underwater Wine project comes from a partnership between three companies: Parovel vigneti e oliveti 1898, leader company around the territory producing for over 120 years wines and extra virgin olive oil of great prestige, in partnership with Serena Wines 1881, one of the most historical and renowned company in the province of Treviso, enriched with an experience in the production of sparkling wines both Conegliano-Valdobbiadene, Prosecco Superiore DOCG and Prosecco DOC. The communication and image direction belongs to the studio Francescon e Collodi, a company with an experience of over 30 years in the communication and graphic fields in the wine market.
